Our Thanksgiving Weekend

We had our own little Thanksgiving at home this year, this is the first year that I haven’t spent the holiday with one family or another… Kind of weird.

We ate around 2pm. Had a nice leisurely day at home. Matthew came over for a few hours and the boys played Halo.

Friday Nathan dropped me at Jessica’s at 6am. Polly met us there too. We all loaded up in Polly’s truck (which she had stocked with donuts for breakfast, excellent thinking P- they were much appreciated!) and headed out. We shopped from then until around 2pm. Then headed back to Jessica’s and wrapped some gifts.

Polly and I had decided we wanted to take advantage of the TV deals going on but didn’t want to wait in line at Target. On Thanksgiving I found a good deal at Sam’s Club so reserved 2 TV’s and we picked them up on the way back to my house so Polly could drop me and our new TV off. We love our new TV!!! It’s part of our Christmas gift to each other this year. Plus we got a really good deal!

Later that night Kevin called and was wondering if we wanted to see a movie with him (it was his bday). He wanted to see 2012, so we headed over to pick him up (he can’t drive for the next 3 months) and went and saw that. It was a great movie, highly suggest it!

Saturday was homework day. Then church and date night. We saw New Moon, it was really good, way better than Twilight. After that we hit up Applebee’s for half priced appetizer’s, num! Except the place was PACKED!!! Full of a bunch of teenager’s. It was weird to realize how long ago it was that I was part of that world, lol.

Sunday was chore day! Nathan finished up the rest of our homemade Christmas gifts and I worked on my portion of homemade gifts. I ironed ALL of Nathan’s work clothes, which I did as I watched The Bodyguard, yes it took me a whole movie to iron his clothes!!! I wasn’t even moving extra slow or anything, ironing is so annoying!

I then proceeded to clean out both of our closet’s. There are so many clothes neither of us wear and it was time to purge and pass them along to people who can really use them. I dropped off an entire car load at Chap’s on my lunch today…

Anywho, so excited, only 2 more weeks of school this semester! I am so incredibly ready for our 4 week break! 1/3 of that break will be spent in Puerto Rico!!! YAY!!!!

Anywho, hope all is well and everyone had a wonderful Thanksgiving!

Spatchcocked Turkey

Today for Thanksgiving I made our turkey using the spatchcock technique. Spatchcocking or “Butterflying” a bird, this is more commonly done with chickens, involves cutting out the backbone of the bird and then breaking the breastbone. This allows you to place the bird flat onto a pan for roasting. In the case of a turkey, it greatly reduces the cooking time needed. The average 10-12lb turkey will cook in about 70 minutes. Our Turkey was still a bit frozen, but it still cooked in 2 hours. Beyond cooking faster, this also results in a marvelously moist and delicious turkey! Stupid science project.

I am beyond stressed out- over a stupid science project. I wish I didn’t push myself so hard for A’s in all my classes, it’d make things a lot easier.

I am going to do my best to forget about it the next couple of days and focus on the holiday and Christmas shopping. I will devote my Saturday to stupid science…

On the bright side I’m pretty sure we’re going to see New Moon tonight and I am really excited!!! I’ve read all the books twice and am hoping this movie is way better than Twilight!

Kevin

Kevin, the best man in our wedding and our guide on the Superior Hiking Trail, broke his neck and fractured his skull early Saturday morning.

He was leaving a bar in the Elko area and had a couple blocks to walk. A stranger pulled up in a pick-up to pick someone else up. Kevin thought he’d jump on the back and ride a couple blocks to the stop sign ahead and jump off. The driver didn’t stop and took a sharp turn throwing Kevin off the back.

He is at HCMC and it sounds like he’ll be released sometime this week. He is able to move all of his limbs. They are waiting to see how his memory is doing. He isn’t in much pain and he sleeps almost constantly, not because of pain meds but because of the nature of his injury.

We’ll be bringing him and his family dinner on Wednesday whether he’s at home or at the hospital. I think he’s hoping he’ll be home by then. We visited him yesterday but he slept the whole hour we were there, mainly visited with his family.
